PROCEDURE

Treatment with a sulphite of barrels to be refilled :
burn 2 gr of sulphur per hectolitre of capacity
Preservation of empty tun : burn 4 gr of sulphur per hectolitre of vacuum ; the action should be renewed every 40 or 50 days
For broached barrels, tuns and vats : 4 to 5 gr per square metre of wine surface
For the mutage of the must : 5 to 6 gr of sulphur per hectolitre of capacity and draw off after lying for 30 hours ; double the proportions in hot countries.
For the treatment of wine-harvest : burn 5 gr of sulphur per hectolitre of capacity 2 or 3 days before throwing the grapes.

DOSES

1.25 g for a 16 gal approx barrel 60 l
2.5 g for a 30 gal approx barrel 110 l
5 g for a 60 gal approx barrel 220 l
10 g for a 150 gal approx barrel 600 l
12.5 g for a 160 gal approx barrel 650 l

For the vats, use sulphur candles with an iron wire in it and titrated according with an iron wire in it and titrated according to the vat to be treated with a sulphite

50 g for a 3.75 gal vat 20 hecto
100 g for a 8.50 gal vat 40 hecto
150 g for a 13.50 gal vat 60 hecto
250 g for a 23.50 gal vat 100 hecto

IMPORTANT : to avoid leaking, hang the plate flat the action of SO2 which has emitted is about twice the weight of the plate or the candle.
